Lockdown refreshments for an instant pick-me-up
Have you found that without our normal freedoms and routines, meal times can feel like a bit of a slog? Our team here at Active Edge Physio swear by the following for easing the load and making meal times more exciting:
- Serving food on a platter
Bringing the dining out experience to eating in, when the food type allows, try serving it on a shared platter and inviting your kids to serve themselves (rather than already dishing it up on their individual plates). Of course this only works with certain foods and is not suitable if any family members have allergies, intolerances, or other eating-related challenges, but for foods this does work for, it can be fun to empower kids to serve themselves now and again. - Dim sim entrees to the rescue!
Steaming dim sim, then cutting them in half and cooking them slightly on the BBQ or in a pan, before serving them as entrees is a great way to buy some uninterrupted time in the kitchen to finish off the main meal prep. - Fun fruits and veggies
Cutting raw veg and fruit into fun shapes using small cake icing and cookie cutters can entice even the most reluctant healthy snacker into eating their five-a-day. - Firecracker Salmon
This has been a winning recipe in our team, originally found on the @myhealthydish Instagram account.
Simply fry some salmon, wrap in rice paper and green onions and fry again until crispy. Make the sauce using 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp white vinegar, 1 tsp brown sugar and toss in some sesame seeds and cilantro.
And for you?
Homemade ice coffee
Pour your double espresso mix over ice cubes and mix in sugar and milk to your liking. To avoid the coffee becoming too diluted, you can pre-prepare ice cubes made from coffee to use instead.
Should the age and cooking ability of your other family members permit, ask someone else to cook!
